This is the recipe for Embutido of Filipino style meat loaf, with a twist.  My wife had someone make the recipe for her wedding reception and they called it Gelantin de Fruita.  Gelentin de Fruita would actually be a fruit salad in gelatin, like adding fruit to Jello.  This is made like a pineapple upside down cake, where the fruit cocktail is placed in the bottom of a pie plate and then covered with the embutido mix and baked.  You can just use the embutido recipe if you wish, without the fruit!
